Good Evening (say what??)
I just finished the third dog walk of the day, and still exhausted from yesterday’s hiking adventure. Our hiking video + blog post will be live Friday! 🙂 The good thing about being tired is planting yourself on the couch and catching up on work while binge-watching terrible reality television. If you’re wondering, I’m two seasons deep into Southern Charm.
I did manage to get up and make delicious pancakes today (My legs feel like cement.) I get a lot of questions about the protein pancakes I make, and I thought I’d take some time to share the “how-to” on them tonight! Who says you can’t throw out an unplanned blog post in the evening?
I have to admit, this wasn’t my first cup of coffee today. I have been doing the one cup of coffee a day for a very long time, and plan to continue this, but today I couldn’t pull myself together. I had a cup of coffee at Kyle’s this morning, drove way out into the country to pick up my dogs from my parent’s house, and then turned to coffee and a delicious protein pancake breakfast in hopes that it would bring me back to life.
What I love about this simple protein pancake recipe is that it only has three main ingredients, and then whatever extra’s you want to add! This entire stack has 240 Calories, 21 Carbs, 4g Fiber, 6g Fat, 27g Protein, and only 2g Sugar. Talk about a perfect post workrout breakfast. The game changer with protein pancakes is using plant-based. It tastes so much better!
3-Ingredient Go-To Protein Pancakes
Ingredients
- 1/2 Large Banana (or small banana)
- 1 Scoop Vanilla Plant-Based Protein Powder (I used Vega)
- 1 Large Egg
Instructions
- Mash the banana with a fork and scramble it with the egg.
- Mix in the protein powder.
- Heat a pan to medium. I used avocado oil spray to grease.
- Scoop the pancake batter into your preferred sized cakes onto the pan, (add your choice of fillers) and cook each side for about six minutes.
I love how thick these pancakes are! The protein powder really adds the floury texture. And if you want to be super adventures, you could add chocolate protein powder and some peanut butter. That’s what Kyle likes to do!
I’m a blueberry girl (just laughed out loud by myself because I thought of Willy Wonka, goodness I’m delirious today), and that’s always my go-to filler! You could add chocolate chips, nut butter, cranberries, apples, or anything you like in your pancakes. I had to finish this recipe off with some maple syrup! Goodness, I love syrup! This recipe also works in the waffle maker! I’ll make those tomorrow, and share the photo on my Insta story.
I’ll be heading to yoga early morning in hopes that I can start my day off right and pull myself together! I’ll keep you posted. Now, it’s time for me to make a cup of tea and just dive deeper into this show! Have a great night, everyone!I had to share an update this morning! The waffle turned out great! Photo above 🙂
Questions for you!
- What is your pancake filler?
- Are you a chocolate or vanilla protein person?
- Have you ever had a day where you couldn’t pull yourself together?

Haha I 100% know the feeling you’re describing. I have yet to go on my first hike of the year and I know when I do… It’ll be a snooze fest right after.
ALSO – we finally hit up yoga today! I was feeling very inspired by your posts and I knew I needed to get back into it. And holy moly was I tight. But it feels soooooo good!
I love how I always have these ingredients around the house. I wonder if this would work with a flax egg too…
My pancake filler is strawberries with coco whipped. It’s a go to!
Chocolate protein. But that’s because plant based vanilla can taste funny to me if I’m just straight chugging it (which I usually am).
Ummmm I pretty much have those days every week haha. But that’s one thing about teaching is even if you can’t, you have to pretend like you did. It almost feels like acting sometimes. I think it helps prevent a funk from ever taking over though!

Good for you for getting back to yoga!! 🙂 I did it this morning and actually going back again tonight for a deep stretch class 😀
I love berries in my pancakes/waffles too!
Lol truth!!

I feel like I’m the only one who hasn’t tried the two-ingredient pancake before/variations of it like yours including protein powder! I’ve got to try it one day, haha! I’m so slow! 😛

what’s your tip on making the perfect pancakes without them turning into scrambled eggs?!
Taralynn McNitt says
adding protein powder and only one egg!

I experience those days all to often! Those pancakes look delicious I really need to try this!! My husband and I love pancakes but I feel like the mix you buy probably isnt the healthiest so this is such a great alternative. I actually really love chocolate chips in mine! hehe

Thanks, Katie! They are really delicious! 🙂 I LOVE chocolate chip cookies, but never in my pancakes. I have no idea why!

These look super good! My go to filler is pecans and banana slices on top! I’m usually a vanilla protein powder person, I like the versatility it has. And i’m literally having one of those days today! I didn’t sleep well last night so I am soo tired and feel like I’m just fumbling my way through work. I took a nap on my desk on my lunch break and am currently drinking a diet coke for the caffeine (which I rarelly do) but today it is soo needed haha
Taralynn McNitt says
Yum!! Those sound delicious for fillers. Sleep is always the culprit. I almost grabbed a diet coke today lol but I’ve been doing so good staying away, but you’re tempting me! lol
Hope you’re feeling back to yourself! Get some good rest this weekend 😀

These look sooooo good! Love blueberries. I just started crossfit and I’m trying to eat healthier so I’m looking for quick and easy recipes like this. Thanks for sharing 🙂
Taralynn McNitt says
That is awesome, you go girl! Crossfit is no joke! I did it four times and thought I was dying after hahahaha
Madeline says
1.What is your pancake filler? Blueberry and lemon… YUM!
2.Are you a chocolate or vanilla protein person? I’ve only had vanilla because I thought it would be better for mixing with other flavors but I feel like it’s really chalky. I need to try chocolate or look into other brands.
3.Have you ever had a day where you couldn’t pull yourself together? haha more than I’d like to admit!
Taralynn McNitt says
Yum! I LOVE that combo!
I find that the plant-based ones are less chalky, but I also like “chalky” lol I’m so weird.
hahaha! me too, girl!
