I totally owe you guys a recap post and I promise I’ll write it as soon as I finish this recipe! I’m just so excited to share this healthy & delicious pumpkin pie recipe with you!
Kyle and I headed to my parent’s house for dinner on Saturday night. My parents made delicious chicken and steak fajitas for us, but it was the dessert that I was most excited about.
I’ve been so busy lately that I’ve had a hard time getting into the fall spirit. That is super weird for me because I’m usually in Fall mode from September to December. Can you believe I haven’t even bought a Bath & Body Works candle yet? Things are finally starting to settle down here and I’m excited to carve some pumpkins, head to the pumpkin patches, and maybe do a little more fall baking.
I was telling my mom that I wanted to make a healthy pumpkin pie for my blog because I haven’t posted many recipes for my readers lately. She decided to surprise me by making the healthy pumpkin pie! It was super cute because she kept saying “I think your readers will love this.” I knew I had to post her recipe for you all! & I totally agree with her! You guys WILL love this.
INGREDIENTS
Pumpkin Pie Crust
*1 1/2 Cups Whole Wheat Flour
*1/2 Cup Unsalted Butter
*5-7 Tablespoons Cold Water
*1 Tablespoon Honey
*1/2 Tablespoon Pumpkin Pie Spice
*1/4 Teaspoon Salt
Pumpkin Pie Filling
*1/4 Cup Honey
*15 oz Pumpkin Puree
*1/2 Cup Baking Stevia
*Tsp Vanilla Extract
*3 Large Eggs
*3 Tablespoons Butter (or Melt Spread)
*1/2 Cup Milk
*1 Tablespoon Pumpkin Pie Spice
*1 Teaspoon Ground Cinnamon
DIRECTIONS
1. Heat the oven to 350 degrees.
2. In an electric mixer, add the butter, whole wheat flour, salt, chopped butter, honey, pumpkin pie spice and mix on a low speed. Add in the water (one tablespoon at a time) until the mixture is moist.
3. Roll out the dough and place it in a 9-inch pie pan. Use your fingers to form the perfect crust.
4. In the electric mixer, combine all pumpkin pie filling ingredients together. Do not over mix 🙂
5. Pour the filling into the pie dish.
6. Bake until the pie crust is golden and the pumpkin pie is firm. (Approximately 40-45 minutes) *Cover the pie crust with tin foil to keep it from burning.
7. Let the pie cool for about an hour before eating!
Nutrition Facts for an Average Slice of Pumpkin Pie:
370 Calories, 15g Fat, 50g Carbs, 28g Sugar, 5g Protein
My Mom’s Healthier Pumpkin Pie: (pie makes ten slices)
215 Calories, 25g Carbs, 9g Fat, 7g Protein 11g Sugar
This pie did not taste super healthy or bland. It was full of flavor and I loved the blast of spice and pumpkin! I cannot wait to make this for Thanksgiving 🙂 If you are trying to keep it on the healthier side this Fall, try out this recipe! It’s so worth it. What constitutes a serving for your pie? Like 8 slices, 10 slices? It sounds really good, but I can’t get the nutritional values to work out like you have and I’m really careful with what I eat!

Did you find the crust very sweet? The honey plus the stevia sounds like it would be very very rich!
Also – why go with unsalted butter and then add salt? Is there a reason?

Oh no!:) The stevia goes in the filling. There is only 1 tablespoon of honey in the crust! 😀
There is more salt in the salted butter than the salt added! You could use salted butter if you’d like.

I really hate pumpkin pie 🙁 Every year I have a piece hoping I’ll like it, and every year I actually dislike it more. It sucks, but hey, now others can enjoy more of it 🙂

The pie looks perfect, I never thought to sweeten with honey.
The trees in the NW have been turning for a few weeks now and are just starting to get the pretty dark red color. I’ve had my Fall and Halloween decorations up for about 2 weeks, so I have really been in the mood.
I use Halloween as one of my three no-guilt candy splurges a year. (Easter and Christmas are the others, I rarely eat it.)

I was in the fall mode the second September hit! I think it’s the earliest I have ever been full on in the mood! I have had candles burning and fallish coffees everyday. I might be a basic white girl, but pumpkin is something I’ve never been completely into. I have one psl a year (to say I’ve had one) and that’s it. I’ve never been a fan of pumpkin pie, but every year nothing changes. I do, however, like pumpkin cream cheese cookies. They are to die for!
I have never been a Halloween girl. I’m a fall girl and a Christmas girl. But costumes and houses covered in spiderwebs aren’t really my thing. (Again, anti basic girl thing! I know..)
My family went camping over the weekend and when we came back it was like fall had hit overnight. All the trees are changing, some are losing their leaves. But it’s still early so there is time to enjoy all the colors!

I love pumpkin pie so much! I’ll have to give this a try. I’m definitely in fall mode! I live in Canada and our thanksgiving was this past weekend…that really makes it feel like fall! The leaves around me are so pretty right now, was just on a walk tonight taking in all the pretty fall colours.

I am in fall mode, I want to wear so many sweaters and not feel hot, and I love smell of fall air, the pumpkin. I probably will be working on Halloween which is kind of fun working, but then you have to tell people ta the candy, costumes and all have not been discounted. Lol. The trees have changed a little, I just can’t wait to see the orange color on them.
P.S: this recipe is so brilliant, I love how there’s only 11 grams of sugar compared to 28 grams that’s amazing and you don’t have to feel so guilty even though it taste good.

I’m going to reattempt at making this pie for thanksgiving next week! LOL, the first time I made it, I didn’t bake it all the way, the filling was runny and not firm! Sooo wish me luck this time! Any added tips are much appreciated 😀
P.S. Do you put tin foil over the whole pie when you are covering the crust to keep it from burning?? Thanks doll
