Well, we’ve made it to week three of social distancing.

As someone who naturally loves staying home and can easily say “no” quickly to invites, I’m officially stir crazy. The secluded trails and tennis helped a bit, but like most of you, I’m ready to wake up from this bad dream. I know this too shall pass. I hope you’re all staying safe and getting through this uneasy time. And as I promised, even though my recaps are a little uninteresting, I will continue to share my week ♥

Seas the day! ♥

One thing I’ve been loving is taking my dogs for an early morning stroll, sitting down with my coffee, and getting a slow start to my morning. I mean, what’s the rush? If anything, these past few weeks have taught me to be more still. I used to get antsy and want to drive here or drive there just to distract myself, but I’ve learned to get up and do productive things like fold the laundry, sweep the porch, unload the dishes, you know…actual responsibilities.
Since we’re back in the upper 70’s smoothies have been making their way back into my life again. I usually stick to frozen fruits like bananas, mango, blueberries, pineapple, strawberries, and raspberries. I add a vanilla plant-based protein powder, cashew or almond milk, and blend! I love topping it with granola, honey, and coconut flakes. 😋 
Monday night tacos were one of my favorite parts of the week!

These corn tortillas were filled with chicken, taco seasoning, jalapenos, black beans, onions, tomatoes, dairy-free cheese, black pepper, fresh lime, and topped with a garlic aioli sauce. I’ve been experimenting with recipes this week because once I get moved into the new home, I want to start filming recipe videos for YouTube as well as putting together recipe print outs to go along with it. It’s been a project I’ve been working on, and I cannot wait to get started. I’m hoping to have the first video go live in early June! The good thing about this extra time at home is working on projects I’ve been putting off. 
I had these tacos for lunch on Tuesday as well. I made Kyle’s with the flour tortillas and used corn tortillas for mine. 😋 
Something I really miss is seeing Becca 😢 We haven’t seen each other since March 1st. We decided to do FaceTime workouts together a few times a week, and I actually loved it! I think we’ll be doing this even when this social distancing is lifted. We are going to be doing a leg day today! Let me know if you’d like me to keep sharing what we do.
Another recipe you can look forward to is honey & spiced salmon! 😋 All of you salmon lovers are going to have to try this one out! I had baked broccoli and potatoes on the side. I bought a giant bag of broccoli a few weeks ago, and it’s lasted me a long time. I think I’ll make a mini broccoli salad for lunch today.

I spent Wednesday putting together the travel blog for Malibu! If you haven’t seen that one yet, make sure to check it out! I have a few more blogs from California ,and then I’ll be all caught up on the road trip down the coast series. 
On Thursday morning, I spent the day outside with the dogs while we had several home inspections. It’s such a weird time to be selling your home because you have to be out of your house and away from inspectors, but there’s literally nowhere to go since we’re all social distancing, so outside it was!
Breakfast called for another smoothie bowl (PS I always share my smoothie recipes on my Instagram throughout the week, so make sure to follow me over there! 😊) And for lunch, I had leftover potatoes, avocado with everything but the bagel seasoning, and a fried egg.
It had been a while since I made zucchini pizzas, which is unfortunate because they are SO DARN GOOD! Even vegetable haters would love these. I bake the zucchini for about 15-minutes at 425, then add the sauce, vegan cheese, and bake for another ten minutes. I finished it off with some vegan parmesan, and it hit the spot!

These two caused some trouble on Friday night.

Kyle and I headed to the grocery store to pick up my parent’s groceries. When we got back, we took them out to the bathroom, and Grumples darted deep into the woods behind my house. He must have seen a bunny and he snapped out of the leash. It was the scariest thing because it was pitch black outside and he took off so fast that I would never be able to catch up, especially since I was wearing flip flops. Well, just our luck, Leo got out of his leash and took off into the woods to run after Grumples. After screaming as loud as I could for them, they finally both ran back. Grumples must have sprained his leg because he’s limping and refuses to walk more than a foot. Losing them is honestly my worse nightmare, and even though they were safe and in bed sleeping with us, I couldn’t fall asleep because my adrenaline was so high. I had the “what if’s” playing in my head over and over. I’m soo blessed because in 18 more days, these boys are going to have a FENCED in the backyard! No chasing bunnies into the deep dark woods. I’ve had Grumples for nine years, and he’s NEVER run away, so it was definitely a shock.

I made some impromptu banana nut muffins on Friday night (before the dog fiasco!) and HOLY MOLY were they delicious!!!!! I was going to make my banana brownies but didn’t have any cocoa powder left, so these delicious muffins were created instead.
I kept them in the fridge and we ate them up in two-days. They’re perfect for morning coffee or a late-night sweet tooth. 
This is the new Saturday night in. 
I treated myself to some crab legs on Saturday night while we watched Ozark. Since our grocery store is always out of meat, crab legs it is! 😊
I decided to try Kristin Ess signature gloss and toner because my hair has been looking so copper! This always happens, but it was looking especially red because of the blonde I had in my hair last summer. I had so many people messaging me about how it worked, and I was super happy with the results!
Kristin ess tonerI have the type of hair that holds onto hair dye so fast that it can go completely black just by dying it brown. I didn’t want to dye my hair, just tone it down a bit, and it did exactly what I wanted! I love how light my hair is, just not the red tones. I will say that leaving it in longer helps! I ordered the box from Target online and it shipped in two days. Worth giving it a shot! 
On Sunday morning, Kyle and I watched Ozark while drinking coffee. I had a cinnamon raisin toast with peanut butter and strawberry jelly 😋

Of course, I have to update you on my wildflowers! 😊 I took out the ranunculus and transferred them to a different pot so I could plant some seeds in their place. It’s funny because three days later, I had baby sprouts coming up! And today (I’ll have to share a photo on Instagram later) they are almost taller than the other sprouts that are 20-days old! I’ve had a lot of people asking where I get my seeds from so I am going to write a blog post this week about all the places I find my seeds and some fun seeding ideas for the summer. Just looking at photos of flowers puts me in a good mood, so I’m hoping it’ll do the same for others in that blog post. 
Look at that thickness! 😊 I’m going to try to transplant these into the ground when we move.  
Look at the baby sprouts that were planted in three days! They’re in the middle. 
Later in the afternoon, Kyle and I headed to the tennis courts for a few hours to hit the ball around. It was a much-needed tennis session. It’s the little things like this that make things feel normal. 
After tennis, I had protein yogurt (protein powder mixed with coconut milk yogurt) topped with honey, coconut, and granola!

One thing I have to share is this Fresh Craving’s cashew queso! I don’t know how they did it, but it tastes like that jalapeno melted cheese you get at baseball games all over your nachos! It’s the BEST vegan cheese I have ever had. I found it at my local grocery store, but their store locator may help on their site. Ahhhh, I can’t wait for you all to try it and report back! IT’S SO GOOD!!!
I did a little recipe testing last night for dinner, which meant delicious air-fried rice wraps and egg rolls! I filled some with chicken, guacamole, kite hill, and fried them in the air fryer. I also topped them with the Fresh Cravings Cashew Queso! MMM dinner was so delicious, and of course, we watched American Idol to end the night!
And now, a house update!

We close in 18 days…I can’t believe it. 😝 I made an update on my Instagram yesterday with my thoughts, but this is just a crazy time to be going through this.

There is still so much to do before we move in, which is nuts. They have to do the landscaping, finish the exterior painting and siding, finish our trim, have a few mistakes taken care of, and then in eleven days we go through and do a blue tape inspection and mark everything that looks “off.”  I’m a bit stressed and nervous, but crossing my fingers, it all works out. I wish I could say everything as been a pleasant experience, but I’d be lying. I’m crossing my fingers everything gets resolved, and after we move in, I’ll do more of a sit-down video and chat a bit about the process. I’ll share things we did wrong and things we did right, along with what we wish we would have known and what we’ll do next time.

We have some projects we can’t wait to get done. The fencing company is coming on our closing day to install the fence for the backyard (yay, no runaway pups!) doors will be painted (garage and front door), we will have a carpet runner for our stairs installed, our piano delivered, cabinet hardware being replaced, all new lights and fans installed (we didn’t purchase from the builder) and our couches being delivered! This is why we are taking an entire week to slowly move in since there will be a lot of hubbub going around the house. And after the first week, you’ll be able to find me in the garden! 🌺

I’m excited to share the home with all the changes! ♥ I’m really leaning towards painting the brick white. I think it’ll look cleaner.

Happy Monday, everyone! What a fun week it’s been. It’s hard jumping back into the swing of recaps, but after staring at my computer screen for the past thirty minutes, I think I’m ready to start. I mentioned last week that some exciting things were happening, and even though I can’t discuss those yet, I’m still just as excited, and it’s always hard to write a recap without sharing things. Believe me; it’s like torture to my typing fingers.

This recap will be filled with a few things I ate this week, a little road trip, lots of puppy pics, family time, and one of the best days baking and working on wedding stuff with Becca! I spent all of Monday working on the computer, and then I had a doctor’s appointment in the afternoon. I have to go back again tomorrow for another couple of tests, but it seems I have finally gotten the answers about my health that I had been waiting for (blog post on that soon!)

For dinner, I had air fried chicken tenders. I cannot get enough of these! All I do is coat the chicken tenders in egg, bread it with almond flour, add some salt and pepper, and cook it in the air fryer for about ten minutes at 400-degrees (until 165 temp.) Kyle said they kind of remind him of the MacDonalds chicken nuggets, and I agree! I eat them on top of kale massaged with habanero rach from Tessemae’s, and homemade guacamole on top! The guacamole is chopped avocado, red onion, cucumber, salt, pepper, and garlic powder.
Breakfast: scrambled eggs with onion, spinach, and tomatoes! This has been my breakfast on repeat for the past month! The first week of introducing eggs back into my diet was a struggle, and my face was breaking out all over. Now, my face has completely cleared up, and they haven’t bothered me.
golden doodle, Leo, simply taralynn, lifestyle, loveI was supposed to go to dinner with some friends on Tuesday night, but I was EXHAUSTED. I was up at five and did editing until around 6 pm, so all I wanted to do was have my spinach smoothie, turn on a show, and head to bed. And that’s exactly what I did. 
Going to bed early paid off because I was up at 5:30 am, did a quick 3-mile fasted cardio (ew, hated that), and then walked the dogs for a mile before starting my day. I was reading up on fasted cardio workout and I thought it would be a good idea to do it in the morning, but I had a headache for the rest of the day, and my heart rate was so high while running. I’m sure you have to train your body to get used to it, but I absolutely hated it. I need my banana before my run. coffee

My breakfast on repeat! ♥ Lately, I’ve been enjoying the fresh peaches, cherry plums, and apples for my side.

I did a lot of recipes developing on Thursday. I completed three recipes that’ll go out this month and a few for Fall! Hello, pumpkin! 😊 One recipe I blogged was this air fried salmon! It’s heavenly, and I make it multiple times a week. You can check that post out here!

On Friday morning, My dad and I drove up to Winston-Salem to play tennis with my aunt and uncle! We had a blast, even though we had our butts kicked. My aunt and uncle are UNREAL at tennis. After tennis, they treated us to coffee and dessert at Maddie Cakes. This place was such a cute spot and a great way to top off a perfect afternoon in Winston-Salem. ❤

I’ve been enjoying messing around with watercolors lately, and I think it’s one of the most therapeutic crafts! You don’t even have to be good at it enjoy it. There’s something so calming about watching the colors bleed into the paper.

For my dinner, I had roasted carrots, cauliflower gnocchi, and scrambled eggs. 
I was up early on Saturday morning to get a headstart on the day. I had fun plans with Becca, and I couldn’t wait to get going! I had an RXBAR, and ginger shot while I was out picking up groceries! 
We spent the afternoon baking tons of chocolate chip cookies for her wedding cake! We found the winning recipe, and you can get the details for that in our YouTube video! ♥
And we had a lot of mishaps…

If you’re wondering what’s on my fridge, it’s the first fall leaf that was on my front lawn last week. I had to put it on the fridge because I’m weird and it makes me happy 😊 🍁 bun, potato, breakfast sandwich, Whole Foods, turkey, no added sugar, gluten free, dairy free , potato bun
For our lunch, we made breakfast sandwiches. This had a potato bun with egg, breakfast turkey sausage, and everything but the bagel seasoning. iced coffee, califa, almond milk, unsweetened almond milk, chameleon, coffeeThis has been one of my favorite summer drinks to cool off and wake up! I have a Chameleon cold-brew coffee with almond milk! 😃 We enjoyed these while the cookies “chilled” & so we thought…
We also worked on all her flower arrangements and the bouquet! The photos don’t do it justice. I can’t wait for you to see her wedding pics!

And since we’re on the topic of Becca’s wedding, I wanted to share a few of my favorite pics I took of them for their engagement shoot. They are the most beautiful couple!! ♥ Their wedding is going to be beautiful.
After spending the day with Becca, Kyle and I headed to my parent’s house to hang out with them and play a game of bags! Can you tell we are obsessed?
We bathed the boys before driving home, and this photo of Leo cracked me up! He looks like a little human in the back of an Uber! 
I had my go-to breakfast on Sunday morning, and then spent the rest of the day hanging out with Kyle. He finally caught up to me last night during our game of bags! 😢

I woke up early Monday morning to get my recap done before heading to a new tennis group to play for a few hours. It was a lot of fun! Before I headed out the door, I fueled up with my go-to protein oats! These protein oats have been my staple breakfast for the past few months, and they haven’t gotten old yet! It’s super inexpensive breakfast, and you can pack it to go anywhere!

I decided to make a Blue Apron for dinner on Monday night. Kyle and I love making Monday night dinner while we watch American Idol. I have had a few top favorites on the show, but I finally know who I want to win. First off, I’m still upset that Eddie Island went home. He was so fun to watch and pretty dang talented. I’ve been lingering around 3.0 – 3.5 miles for the past two weeks. That four is going to be harder to hit than I thought. Anything past the three feels challenging right now, but it’s my fault for going out when the sun is hot! The allergies aren’t working my favor either. It’s that 3-mile mark that my body is so comfortable with. It doesn’t want me to go any further, but I’m going to keep trying to push through. I’m hoping to run a trail this weekend to change up the route.

Speaking of the chicken salad recipe, I had to make a giant batch before I left for my trip. Kyle and I have been living off of this stuff! I made a huge batch for him to eat throughout the week, and I also made some wraps for me to take on my drive.

The road trip down to the Brunswick Islands is about 3 hours and 45-minutes. I made it down to the Brunswick Islands around 2 pm! I cannot wait to share the whole trip with you this week. 💜 It was seriously one of my favorite places to visit. We had so much fun during day two activities. I started my day with protein oats before we left the house, snacked on an apple in the afternoon, and then we headed back to the house to get cleaned up for dinner. When we got back to the house, we had exactly one hour to spare before leaving for dinner. I decided that I would go out for my scheduled run. I knew that if I put it off, I’d keep putting it off, and I do not want to get out of the routine. Sure, it would have been so nice to relax for a bit after a full day of activities, but I knew it needed to get done. I also think I would have fallen asleep if I sat around for an hour.

After my oats, I decided to get off the couch and go complete my run! It was a HOT one, but my run did feel good. Kyle and I decided to get a late lunch at Legal Remedy Brewery. We wanted to get out of the house and enjoy the weather, so we figured this would be a great spot. I ordered the grilled chicken sandwich with no bun, fries on the side, and brussels sprouts! The food was delicious. Oh, and a diet coke. I rarely get a diet coke, but it sounded so good! Totally worth it.

Oh man. “Scatterbrained” is the word I’m using to describe myself this morning. I have a lot of writing and emails to catch up on, but my creative mind is telling me to do all kinds of other things. I’m going to try to control myself for the next hour and get through this recap post and then I’ll move on to more creative activities today.

I’ve been doing a bit of thinking about how I want to format all of the Disney blogs since we were there for an entire week. That means over 2000 photos (and only 100 good ones 😆) to go through on the camera roll. I think I’m going to share the entire itinerary that we followed with the photos and details about each activity. That way, you can use it to help you plan your visit to Disney World. We did a lot of different things than our last trip, so it’ll be entirely new experiences! Plus, I’ll be sharing the “You Control Our Day” at Disney World video as well. That was a blast (and frustrating) to film.
I know most of my recap blogs start from Monday, but all of that is pure Disney content. I’ll be starting the weekly recap blog on Wednesday! It was our last day at Disney World, and we had fifteen hours to waste before heading to the airport. After six days of walking 20k + steps and doing all things Disney, we were zonked. We had about 1% battery life left inside of us. We decided to just chill out at Disney Springs instead of walking around another park. At this point, we had done pretty much everything there is to do in Disney World.

We checked out of the hotel at noon, left our luggage with the bell services, and took a bus over to Disney Springs for the day. We were super hungry when we got there, so we decided to have dinner at The Polite Pig. We both ordered the southern garden salad with smoked salmon on the side. The salad had baby kale, radishes, blue cheese, pecan granola, and avocado-chipotle dressing on the side. It comes with the bacon-sorghum vinaigrette, but I highly recommend their avocado-chipotle dressing instead. We also ordered a side of whiskey maple brussels sprouts and seasoned waffle fries. The food was fantastic. I was so inspired by this salad that I picked up radishes and baby kale this past weekend so that I could recreate it. Someone, please send me this recipe for the dressing asap! 
We are pretty good travel buddies because we both don’t like to sit around for long periods. We have to be doing something constantly, so when we found out there was a bowling alley at Disney Springs, we knew exactly how we were going to kill some time. We played three games and both crushed it. Where do we sign up for a bowling league? Kind of not kidding. 😂 
Caitlin had wanted to stop into Enzo’s Hideaway, so that was our next place to kill time at. 

I don’t ever order cocktails, so I thought I’d give one a shot (no pun intended.) I had the Limoncello Gimlet, which had gin, Caravella limoncello, and roasted thyme. The lemon was delicious, but I don’t’ think I’ll ever be a fan of gin. I would have rather had a tall glass of lemonade, but luckily Caitlin liked it, so it didn’t go to waste. Caitlin had their Peacekeeper which had monkey shoulder scotch, pineapple, Maraschino liqueur, lemon, angostura, and Prosecco. I tried hers and liked it a lot because it was fizzy and refreshing. This was a great spot to escape from the heat.
We spent our last hour looking for little souvenirs for the family. I stopped into Ghiradelli and picked up my parents two boxes of chocolates. Ok, yeah, I got one for myself as well. Who says “no” to chocolates?

Towards the end of the day, the tiredness and deliria kicked in. Have you ever been so tired where anything and everything is funny? We were SO ready to be on the plane home. We still had to leave Disney Springs, head back to the hotel to grab our bags, hop on the magical express, stop to pick up more passengers, and then go through security. 
MOOD!
When we got to the airport security, the line was about a mile long. I had never seen a line like this in my entire life, but it was kind of funny watching people find out that this was the line to get through security. Their mouths dropped to the floor. The line was wrapped around, and it was even longer behind us.

Luckily we made it to our gate and had time to grab some food for dinner. We grabbed fajitas from beyond the border, and I instantly regretted it. I had like two bites and had to throw it out. The vegetables were raw, the beans were watery, and my chicken didn’t taste like chicken. I think we were spoiled with amazing food all week and this just couldn’t be stomached.

I finally made it home around midnight. I was so excited to see the pups and spend some time with them before heading upstairs to get ready for bed. And nothing feels better than waking up in the morning and being able to make my coffee and relax in my own living room. I love to travel, but I also love being at home. 
It was rainy on Thursdya, so I decided to stick around the house catching up on work and my laundry from the trip. I just wanted to spend all the time with my pups because I missed them like crazy! I made a smoothie bowl for breakfast because that was about all I had in the house and I did not feel like going out in the rain to grocery shop. I was going to try to hold out on that until Saturday morning. My smoothie bowl had frozen peaches, almond milk, ice, banana plant-based protein powder, and topped with peaches, almond butter, and muesli. 
I ended my night catching up on a few of my shows and the Bachelor. This has been such a weird season. I never actually like any of the girls. I feel like the girls just go on the show for fame now. I mean, I don’t blame them, but it takes away the point of the show. I was team Demi all the way. I felt like she was the most real 😂 Anyone? 🦗 
I was up bright and early on Friday morning. Grumples had been limping while I was out of town, so I wanted to get him checked out, and he was due for his annual shots. The good news is that he is 100% and super healthy! His weight has been the lowest it’s been since bringing him into his vet four years ago. I’ll hear blood test results this week, but keeping my fingers crossed that everything is fine and dandy. Can you guys believe he’s going to be eight in July? He’s still my sweet puppy.
I decided to stop into a cafe since it was right next to Grumple’s vet. I still hadn’t gone grocery shopping, and I needed a lunch to pack for my afternoon appointment at the dealership. I thought this was a perfect excuse to grab one of my favorites! 
I needed to get a recall fixed on my car that I had been putting off for a year. Apparently, the jeep’s airbags go off randomly, so it was kind of important to get it done. I was there for a few hours and managed to get a blog out while I was there.

While I worked and waited on my car, I had the vegan kale caesar salad and a half of their veggie sandwich on gluten-free bread. It as even better than I remembered…
Kyle and I ran some errands on Friday night. I took a hot bubble bath and then hopped on the couch to have dinner and finish True Detective. I had leftover kale salad and topped it with the crispy cauliflower gnocchi! I somehow managed to fall asleep on the couch at 7:45 pm. I zombie walked upstairs, brushed my teeth, and fell right back asleep in bed. 
I needed that twelve hours sleep more than anything! I woke up feeling super energetic and excited to start my day. I hadn’t met up with my tennis group in a while, so I decided to join them Saturday morning. We played doubles for about three hours, and then I decided to head out and get some grocery shopping done.
It felt so good to restock the fridge after I cleaned it out before the trip. I filmed a grocery haul and will have that up sometime next week! I’m going to try to get the Disney posts out first. 
On the way home, I stopped off at Starbucks to pick up an iced coffee. I needed an afternoon pick-me-up and something to cool me off. Kyle and I planned on doing another clean out, and I needed the energy to do it.

We managed to fill four boxes and five garbage bags of stuff to donate. Lots of blankets, pillows, towels, artwork, and dishes have been dropped off. 
After doing the cleanout, I made a fresh salad. It had baby kale, avocadoes, sunflower seeds, apple cranberry quinoa salad, unsweetened dried cherries, sweet potato crackers, and a homemade balsamic vinaigrette dressing. I have a lot of salad ingredients in the fridge now, so be prepared for an overload of salad pics on next week’s recap blog. 

Kyle made a quick pasta dish for dinner. He used the gluten-free egg fettuccine pasta (which was good) and added ground turkey and pasta sauce. 

I met up with Becca at Le Peep at noon to have brunch. We wanted to go through all of her engagement photos! I loved seeing her reactions to them all ❤

Even though eggs make my face break out (SO FUN), I just wanted them so bad. I had an egg-white omelet filled with veggies and a side of fresh fruit and potatoes. Someone told me to start eating only the whites and see if my face still breaks out after and then do it with only the yolks. I didn’t have any breakouts this morning, so there may be some truth to it. We’ll see! 
Last spring, Kyle and I watched American Idol together every Sunday, so we were thrilled

to see it back on! We grilled some chili lime chicken and made salads for dinner. 🥗
