Happy Monday, everyone!
I started my morning off with an oatmeal cream pie and coffee. It just wasn’t a green juice morning for me. Luckily, the weather is back to being chilly, so after I log off this afternoon, I’m heading out for a six-miler! There’s no excuse when it’s sweatshirt and leggings weather.
This was such a fun week. I spent a lot of it on the couch, working on a new project that I’m so excited to share with you! It’s been a popular request, and I finally got around to making it happen. I’m hoping to have all of the details and everything launch on Friday! So stay tuned. Don’t you hate when people do that? Yeah, me too.
I hope you all have a wonderful week. Can you believe October is almost over?! I’m so proud of myself because I managed to get in 4 to 5 miles almost every morning this week. I love walking because it slows me down during the day, and I focus much better when I get all my energy out first thing in the morning. I’ll usually have my second cup of coffee after I shower off from walking, and that’s when all the endorphins start to kick in. I took a week off from the Sweat app because I pulled something in my neck, but I can finally move without it hurting, so I’ll be gettin back to that this week.
After my walk, morning parfait, and work on Monday, I made a black bean burger with an everything bagel, chive cream cheese, and a side salad for dinner. My salad had mixed greens, blueberry goat cheese, raspberries, blueberries, and apple vinaigrette dressing.
I ended the evening watching Dancing With The Stars. I love that show! I made a purple carrot for lunch on Tuesday. It had a delicious almond butter dressing made up of ginger, almond butter, garlic chili sauce, salt, water, orange juice, and vinegar. I was surprised at how good it was! I did add some hazelnuts, blueberry goat cheese, raspberries, and blueberries to the salad. For dinner, I had the leftover salad and another black bean burger. I love easy meals like this.
And Tuesday night was for the Bachelor! ♥️ What a train wreck, that is! And if you’re wondering, still on that parfait kick! I love having these for breakfast after my walks. Thursday night dinner! I had a salad with quinoa, crumbled everything bagel, mixed greens, blueberry goat cheese, sweet potatoes, cucumbers, and apple vinaigrette. Cozy boys while watching the debates! I headed to the Windy Hill Orchard with my friend Emily on Friday! It was gorgeous outside and the perfect excuse to catch up over cider flights. This is my third year in a row going, and I don’t think Fall would be complete without a trip here. I’m hoping to go again before the season is over with Kyle. I picked up some donuts for my parents and neighbors while I was here. They make fresh apple cider donuts to go with the cider. I’m not a beer person, but I LOVE cider. It’s even better when it comes to a flight, and you can try out all the flavors. My favorites were the Rusty Gold and Hoppin’ Johnny! The best part of the day was this sweet cat that loved belly rubs and people. He slept up on this table from the time we got there until the time we left. My cat fever is so high! Such a fun day!
Also, if you’re looking for some fun at-home workouts from a real trainer (nothing fancy or over-edited like a lot of YouTube videos), my friend Emily shares her workouts on her YouTube daily! They are so easy to follow, and you can do them anywhere. Please go check her out!! (her channel here!)Kyle and I spent our Saturday morning in Waxhaw shopping at the book store, grabbing coffee, and having lunch at Provisions! I blogged all about it yesterday! ♥️ ♥️ We had our good friend, Steve, over on Saturday night for pizza and cake to celebrate his birthday. We ended our evening watching Borat (not my movie choice 😭.)I spent most of Sunday playing piano, reading my October book, and catching up on work. I was in a baking mood in the evening while Kyle watched football, so I made my favorite gluten-free oatmeal cream pies! 😋 If you haven’t tried those yet…well, you better!
Have an amazing week!

I looooove your pink mixer! It’s so cute!! For lunches I’ve been keeping it simple, baked sweet potato with a salad, hard boiled eggs and sautéed kale, avocado toast with ripe Tomatoes 🤤
